Apple Pie Cookies are a bite-size treat. Made from fresh apples and pie crust shells, these cookies are a baked goods dream. The apples are shredded in a bowl and drained of all the water. The pie crusts are cut into small circles with a cookie cutter. The apples are flavored with cinnamon, lemon juice, and a little bit of sugar. Once the dough circles are filled with the apple filling, they are pressed closed with a fork. The tops are slit and sprinkled with cinnamon and sugar.
